i am ruby free today and wanted to make something a little more hands on for dinner. it's just me and dh, so i was thinking falafel with all the fixings would be good. anyone have a favorite recipe to share? has anyone ever used the mixes they sell near the couscous? i wonder if theyre crazy unhealthy and if making it fresh would be way better.

Dallas' Falafel Recipe (Gluten-Free)
***Dallas is one of my BFFs. She makes wonderful food and recently adopted a GF diet. This is her falafel recipe and it's one of the best I've had.
15oz cooked lentils (1/2 cup dry cooked in 2 cups chicken broth)
1/2 cup flat leaf parsley
1 clove garlic, chopped fine
1/4 cup potato flakes (can sub bread crumbs if you don't need GF food)
1/2 tsp salt
1/2 tsp paprika
1/2 tsp cumin
2T of rice flour (or all-purpose wheat flour if not concerned about being GF)
1. Mash lentils once cooked.
2. Combine with spices, garlic, parsley, and potato flakes (or crumbs).
3. Form into 1/2 inch thick patties.
4. Refrigerate covered for 1 hour (this keeps them from falling apart in the cooking phase.)
5. Dust patties with flour. Heat 1 tsp of oil in large skillet over medium-high heat.
6. Cook patties until browned on both sides. About 3 minutes per side.
7. Serve warm with tzatziki.
You can sub lentils with canned cooked chickpeas (or cook them youself). Just mash them without liquid and you'll have a good legume to make the patties with.
She chose lentils because they're easy to cook from scratch and she's also trying to avoid canned veggies.
Love this recipe from Cheap Healthy Good. You gotta do the tahini sauce too
The mixes work fine, but I prefer it fresh. It looks like a lot of work but it's really not that bad, especially if you have a food processor.

Umm, so I made the falafel recipe according to Dallas' recipe. As promised, it was delicious. BUT, it yielded just 2 patties! Fortunately it was one of many items I was preparing. But if y'all want to feed a family, I'd triple or quadruple the recipe.
And esbeek, what the hell were you doing up?!
