Recipe help (NTR...kind of)

Here's the deal, starting Monday I am going to be a full-time student again and I am looking for meal ideas that I can leave for my DH and LO while I am gone. The plan is to cook Monday morning or during my break from class Monday afternoon, this way all they have to do is heat and eat. I would leave my DH to his own devices, but then I am afraid that all my LO will be eating is grilled cheese and mac n cheese.

So, any and all recipes are welcome!! TIA

  • can you do crock-pot meals?  just fix it and set the timer and be done with it. then your house will smell tasty when your H and LO get home to eat.

  • we are having this tonight and it is a great way to get veggies used up, plus a few pantry ingredients we always have on hand.

    Curry Coconut Crockpot

    Combine in Crockpot on high for 3-4 hours and serve over rice:

    1 can coconut milk

    1 can dices tomatoes

    1 can chick peas drained

    3 tablespoons curry powder

    red pepper flakes salt & pepper to taste

    1 large onion

    1 large or 2 small potatoes (I am using a sweet potato tonight)

    any and all veggies: carrots, peppers, cabbage, squash, celery, anything goes!
