CT (or anyone wanting a breakfast option!)

I made these yesterday and they were so easy and good (kinda of like a cross between a peanut butter truffle and and uncooked peanut butter cookie dough!) The kids have to eat breakfast en route to school and so finding something they will eat and doesn't cause a huge mess is key. I doubled the recipe (which was good since it the double bath yielded about 60 balls (enough to snack on yesterday and still have some for the week.) I rolled them in graham cracker crumbs which made them non-sticky. You could also add in raisins, craisins, mini chocolate chips, etc.

Peanut Butter Oatmeal Balls
Makes 40-50

1 1/2 cups Old Fashioned Oats, ground in a food processor
1/2 cup peanut butter (you can also use almond, cashew or sunflower butter)
1/2 cup honey
1/2 cup coconut flakes, unsweetened or 1/2 cup graham cracker crumbs

1. Place the oats in a food processor or blender and pulse until finely ground.
2. Stir the peanut butter and honey in a bowl until thoroughly combined.
3. Add the ground oats and continue to stir until thoroughly combined.
4. Using 1 teaspoon of the mixture at a time, roll into little balls.
5. Place the coconut or graham cracker crumbs in a separate bowl and roll the balls in either to completely cover.
6. Serve cold or at room temperature; store leftovers in the fridge for up to a week.
