I tried those sweet potatoes pancakes tonight (I was going freeze them for the week) but I couldn't get them to cook :-(  I kept tweaking with the temp but even when it was low enough that didn't burn they wouldn't cook through.  Any tips/suggestions?  What pan did you use to cook them in?  Thanks!

    Oh no! I'm sorry :( I cook them on my griddle with the heat set to 300* (which is one of the lowest heat settings on mine) and they do take a long time to set. Making the pancakes small and using coconut oil liberally on the griddle really helps. I'd say they probably have to cook for 5-8 minutes per side.

    Thanks!  I have terrible luck with grain free pancakes.  I was cooking them on my ceramic pan with coconut oil.  I couldn't get the heat low enough for them to take 5 minutes a side though, so I'm sure that was it.   I'll keep that in mind for next time I try!
