I could be wrong, but I believe the only true way to find out is to cut all dairy (including hidden dairy like whey) for 2-4 weeks and see if the symptoms improve.

This is what I did. The symptoms I was concerned about were colic and green poop. I re-introduced milk after 2 weeks and that was how I really knew because LO was screaming and miserable
My LO had mucousy poop and was fussy. I cut out dairy and soy 5 weeks ago and the mucous hasn't changed. I would cut out both bc about 30% of milk intolerance also have soy and then you don't have to do the elimination at different times. It's hard to do because dairy is such a huge part of my diet and soy is in everything!

My baby has the milk protein allergy-- allergic to dairy and soy. He had blood in his diapers starting at 6 weeks... very scary! I eliminated dairy for 2 weeks and he still had blood so then I eliminated soy. It takes 2 weeks to eliminate the presence of dairy and soy from your diet. Soy is in everything so it is a difficult diet to follow... the blood in the diaper was how we knew for sure there was a problem with the allergy.

Were all of your lo's poops mucusy? Of course now that I have been examining his diapers there hasn't been any traces of mucusy poop but I swear I've seen some in the past
At first not all of my LO's diapers were mucousy but over time as the proteins built up in his system he had consistently mucuosy stools, and then blood in his stools. He also had other symptoms like silent reflux, ezcema, and extreme gas/stomach pains.
I eliminated dairy first, then soy, and he still had mucuos so I ended up on a total elimination diet (TED) and found that he also cannot handle eggs or tomatoes. It took about 3-4 wks total to see complete improvement because it took time to figure out all that was bothering him and it takes time for the proteins to leave your system and your LO's.
There's no real test for intolerances, just trial and error, and watching for symptoms in your LO. You can do allergy testing but it is usually inconclusive for children under 2.
If you eliminate dairy be sure to eliminate all dairy including hidden dairy like casein or whey, which can be found in a ton of everyday foods, breads, baked goods, etc. This helped me read labels:
