I'd had a planned c/s at 6:30 pm on Wed, and my milk came in Saturday night - about 72 hours later. There was no question that it was milk and no longer colostrum.
My milk came in 4 days after DS was born. I think around 3 days is the average but up to 6 isn't out of the norm. I grew a cup size over night and it was really obvious that my milk had come in.
Since you are pumping you might see a gradual change in color from yellow to white and in consistency from thick to thin as it changes from colostrum to mature milk.

I was 4 days past c-section. Baby was born on Thursday and milk came in on Monday. I could tell that it was milk because a) I felt really engorged, b) I was able to pump a lot more than I had when it was just colostrom, and c) the milk was more of a creamy white color, like regular milk, and the colostrom was more yellow, like butter.

I didn't have a c/s, but my milk came in at 7 or 8 days with DD1, 4 days with DD2.
Colostrum is usually pretty thick and yellow looking!
