Awesome easy healthy crockpot recipe!!

I got this recipe from the newsletter at Whole Foods- it's very good.  One tip I'd say is to soak your dry beans overnight, I didn't and they were still a little too firm for me when we ate it, but after 3 more hours in the crock after we ate they were perfect.   If I had soaked them they'd have been good at dinnertime. 

The cauliflower kind of melts and falls apart and makes it creamy- you can't really tell there is cauliflower in it at all once it's done.  The chicken shreds up so nicely and the boneless skinless thighs give it a really good flavor!  It makes a LOT (my crockpot was almost overflowing)- we ate it for dinner last night, I have 2 lunches for this week, and I put a whole batch in the freezer for dinner another night in the next few weeks.  Win, win, win, win!!

 

WHITE CHICKEN CHILI

6 boneless, skinless chicken thighs
1 (16 oz) bag dried cannellini Beans, picked through
1 (16 oz) bag frozen corn
2 or 3 poblano peppers (or 2 green bell peppers),
chopped
1 head cauliflower, trimmed and cut into
small florets
1 yellow onion, chopped
2 qts low-sodium chicken broth
1? TB ground cumin
1 TB chili powder


? cup lowfat sour cream
2 tsp fine sea salt


Arrange chicken in the bottom of a 6-quart
slow cooker. Top with beans, corn, poblanos,
cauliflower, onion, broth, cumin and chili powder.
Cover and cook on low until beans are very tender
and cauliflower has fallen apart, about 10 hours.
Stir in sour cream and salt, ladle into bowls
and serve.

35mg cholesterol, 600mg sodium, 42g total carbohydrate (9g dietary
fiber, 8g sugar), 22g protein

  • YUMMMY!  Was it spicy at all?  My kiddos won't eat anything spicy, but I could reduce the chilis if it had some kick.  Thanks!
  • I have this all ready to go in my crock pot for tomorrow!!

     But I couldn't find cannellini beans so I went with great white beans. Hope it's just as good! soaked them for over 3 hours but wanted to throw it all in the crock pot to be ready so they'll be in the broth overnight.
