When this happened for us we just surrounded DS with pillows on the bed and tucked the sheets around them so he couldn't kick them off, and he slept fine. It actually helped us to feel comfortable letting him sleep at grandma & grandpas house and transition his crib into a full size bed (he always fell out of his crib-transitioned toddler bed).
We were in the exact same situation and ended up buying the toddler Aerobed. It has sides that go up so DD can't roll off of it. She's used it a few times with no issues at all.
We only had a Graco Travel Lite for a PNP so DD outgrew it pretty fast, plus we had several plane trips planned with DD was little. We bought a PeaPod. I liked it because it is really quick and easy to set up and take down (after a little practice). I also liked that it kept her contained. DD used it until she was about 18 months old. Now we will probably get something like the Aerobed for her (she still rolls WAY too much to trust her in a regular bed) and keep the Peapod for #2.
I took DD to the store and let her pick out a sleeping bag. She picked out Tinkerbell and has used it on several trips. I just put a blanket down in the floor beside our bed and put her pillow and sleeping bag on the blanket. She loves it and it works great.

I'm having this same dilemma for when we go and visit my parents in March. One of their guest rooms has two twin beds. I may put DS in one and me in the other. It's about the size of his crib mattress so he may be used to it? Or their other room has a king bed and I've thought about him just sleeping with me. But I hate to start that habit since we'll be gone 2 weeks. Ugh- I don't know!
We will be leaving for an extended vacation in a few weeks. We plan on putting a comforter on the floor for DD to sleep on. She sleeps on the comforter on her floor most nights any way so it is no big change for her. Otherwise put them on a bed with pillows around or move a mattress to the floor.

If there's an extra bed we just take some fold up bedrails and put them on the extra bed. If there's not an extra bed for her, then we take this
