Speaking of my H

Last night he agreed to give me one month (I think we will start in February maybe after DS's birthday) to make our house vegan.  He agreed that I can plan and make all our meals vegan and that he will carry that over onto his lunches at work for one month to see if it helps him to feel any better or lose any weight, as he (and I) need to lose some.  

I was vegan prior to having DS, but mainly made meals for myself only.  What are some 'manly' meals you guys can think of that are vegan?  I REALLY want this to stick for him because I think it will help me get back to being vegan if he is on board, as well as for both of our health and his weight struggles.

  • Perhaps you needn't exclude 100% of meat- maybe you could leave a little in so he doesn't feel deprived, but use it as more of a garnish or side dish than main course. Like tonight I made a split pea soup with maybe a quarter cup of diced ham in a huge pot of soup. Adds a bunch of flavor and makes it seem like a more substantial meal without all the other junk.

  • Lentil sloppy joes -- saute onions and peppers, add lentils and bbq sauce, plus a little water and cook down a little; serve plain or with shredded soy cheese on toasted bun

    Garlicky kale and white beans (any recipe will do)

  • Mine is far from manly but DH loves quinoa salad...I usually cook the quinoa then make a vinagrette with lemon juice and zest, olive oil, salt, pepper and garlic powder (pretty much to taste). Then I put in a variety of veggies - usually tomatoes, cucumber and some peppers. DH likes it with goat cheese which is not vegan but I bet something like pine nuts would be good in there too.

    Also chili is pretty easy to make vegan - onion, garlic, black beans, kidney beans, chilis, fresh cilantro and tomatoes...I like to add cashews too which is different but nice.  You could also throw some tofu in there, it holds up pretty well however it makes it very different from traditional chili.
