Breakfast: Cheerios with a banana (girls had toast w/ peanut butter) Snack: P had strawberries/blueberries, R had a yogurt and I had a small piece of cornbread Lunch: Veggie pocket (girls peanut butter sandwiches with a side of veggies) Snack: apple/banana/carrot plus peanut butter crackers for me Dinner: a selection of leftovers
LOL! Lots of times I say the same things about your meals I love that you cook so many things that I have no idea where to begin!!
So, a veggie pocket is very simple- just a salad in a pita. In mine I diced up green and red pepper, cauliflower, broccoli, carrot and a few scallions. Tossed them with some mixed greens and fill a 1/2 pita pocket with them. I add about a tbsp of Balsamic dressing and there you go. Next week I'm getting some provolone to go on it, though. It's totally hit the spot the last few days. I try to get a rainbow of veggies in there, too so I use the orange cauliflower. And it's not tomato season and they all looked terrible so I didn't get that but I'd add it if not.
