Who did freezer meals before LO #2? Did you use any websites/sources? What meals tasted the best? How long before your EDD to did you start freezing meals? thanks so much!
Did you use any websites/sources? No, I just did meals that I had already been making on a regular basis.
What meals tasted the best? I made my chicken, stuffing and broccoli casserole. I also made my turkey meatloaf (I mixed it with eggs and seasonings then froze it raw, all I had to do was throw it in the oven). Another was pork, I seasoned it (with parmesan cheese, bread crumbs, eggs, and flour) then froze that raw too, so I only had to cook it but not prepare it. Doing those things saved a TON of time and I'm actually going to keep doing it.
How long before your EDD to did you start freezing meals? I started making them about 2 weeks before I had my DS but 7 weeks before my EDD (he came 5 weeks early). The chicken, stuffing, and broccoli casserole I actually made the morning before he was born (I had no idea I was going to have him that day).
I just started last week. I made 6 meals last Wednesday. It was relatively easy. I cranked them out in about 2.5 hours with an extra 40 mins or so to cook that night's dinner.
I plan on making 6 meals every Wednesday until I deliver. However, 1 of each of those meals will be dinner that night. I will also be doing twice what I normally do in terms of breakfast prep in order to build up my freezer stash of healthy muffins.
I started 8ish weeks before my EDD, so I am hoping to have at least 30 or so meals in the freezer.
We also scored a good deal for Omaha Steaks on Groupon. We have about 20 meals in the freezer from that.
Here is my Pinterest board where I have been compiling recipes.
ETA: I made the Chili Cornbread Bake for our dinner last week. It was enough for dinner that night for DH and I plus lunch for a couple of days. DS liked it as well.
I also made BBQ Chicken and Chicken curry crockpot meals through one of the pins.
