I just love it when it is simply diced and roasted and topped with olive oil, salt and pepper or you could drizzle some maple syrup over it. It cooks and gets all caramely and delic!
I just slice it, drizzle olive oil and cover with sea salt and pepper. Roast at 350 for 20 minutes. The hubby thinks it tastes like french fries

I just recently copied something I got at Snap kitchen with butternut squash. Basically:
Cut and peel the squash
Toss with olive oil and a few cloves of garlic
Broil it till soft, tossing it a few times
Mix it with cooked ground turkey, goat cheese and pasta
It was good and easy!
