I'm looking for something cute and relatively easy to bring to SIL's house for X-mas. I'm not into the premade dough at all, so I'm fine making them from scratch but don't want it to be a big production. Any ideas?
This year I wasn't up to my normal cookie baking self--I usually make several kind and try out a new kind.
I've made spritz cookies (which I have a press for), chocolate chip cookie bars--super easy, make dough, spread in pan, cook, cool, cut--and the last ones I made were peanut butter blossoms.

These Mint Chocolate Cookies always get good reviews:
3/4 c. unsalted butter 1 1/2 c. packed brown sugar 2 T water 2 c. semi sweet chocolate chips 2 eggs 2 1/2 c. flour 1 1/4 tsp baking soda 1/2 tsp salt ~25 Andes chocolate candies
In a large pan over low heat cook butter, sugar and water until butter
is melted. Add chocolate chips and stir until partially melted. Remove
from heat and continue to stir until completely melted. Pour into a
large bowl and let stand for 10 minutes to cool off slightly.
Using a mixer at a high speed, beat in eggs one at a time. Reduce speed
to low and add dry ingredients, beating until blended. Chill dough in
bowl for 1 hour.
Preheat oven to 350F. Roll dough into balls
(pingpong sized? could be a bit bigger if you want) and place onto a
cookie sheet lined with parchment paper. Bake 8-10 minutes or until
tops are cracking. While cookies are baking unwrap the Andes and break
in half. Once out of the oven top cookies with half of a candy. Let
sit for 5 minutes to soften. Spread over tops of cookie and remove to a
wire rack to finish cooling. **Be sure these are completely cooled
before you pack them away or they'll stick together in one big clump.**

Not cookies, but we did these little brownie treats for DD's school and they were yummy.

I just made emergency cookies b/c H was driving me crazy and I need to go to the store.
1 box cake mix (any flavour, I have some organic mixes I like)
2 eggs
1-2 tbs oil (to moisten)
oven at 350
stir everything together (you can add choc chips or whatever you feel like ~1 cup)
drop by the spoon full
bake for 8-10 minutes
