We're going to a party tomorrow night and the main dish is pulled pork tacos. They asked us to bring a side and the other couple to bring the dessert. What would you bring? Rice and beans? I can't think of anything else that goes with mexican food!
Bonus points if it takes less than an hour to make - We'll be driving to DFW tomorrow afternoon and the party is at night, so there won't be TOO much time (sadly, no crockpot recipes).

My personal favorite for pork tacos is quinoa w/ black beans.
Prepare yourself for awesome...I got this off of Mrs. AJL's blog, but I'm saying this from memory so I may have added or forgotten some of her ingredients.
Cook up some quinoa. Add a can of drained and rinsed black beans. Some thawed frozen corn. Some diced avocado. Some lime juice. Some tomato. Salt. A little cumin, a little coriander. Taste the magic.
This is my lunch today! Except instead of tomato & spices, I add salsa. If I use 1/2 to 1 cup of uncooked quinoa (prepared by instructions on package), add a can of black beans, a bag of microwavable steamed corn (12 - 14 oz?), 8 oz or so of salsa, and an avocado, it makes 5 or 6 servings for me to eat as an entire meal. So, I bet that would be a good amount for a side dish for a crowd.
