Although I'm not due until 1/2/12. I was hoping DS2 would come before Christmas, but now that it's just a few days away, I'm wondering what to do for Christmas. We already have gifts for DS1, and DH and DS1 are going to SIL's for dinner on Christmas day. But I have nothing prepared for Christmas eve or Christmas breakfast. Now I'm thinking I should do something simple but festive. What are your plans? Any suggestions as to easy meals?

We are headed to my mom's house about an hour north of Phoenix unless we get the call the our birth mom is in labor. I really want her to hold off until after Christmas so we will see!
As for easy meals, does any of the grocery stores in your area do the Christmas meals that your order and pick up? I have seen a couple in the area do it here. Or have you thought of ordering from a local rest? We are doing an untraditional Christmas on Christmas Day and then actually celebrating on Monday with the family.
On Friday we'll be hanging out with 95% of my family including aunts and uncles. My mom is doing a lowkey dinner, which will be nice.
Saturday we are heading south to see the Mr.'s family and give presents to his nieces.
Sunday will be spent opening our presents, brunch with my mom, then a late lunch at my sister's house.
Easy meals that are festive are a bit hard unless you buy a precooked ham/turkey and make up some sandwiches. But it's totally doable!
Since it's just me and DH, we do cinnamon rolls on Christmas morning. If you want something more substantial, I make this for friends when we do brunches. It's from All Recipes.
Sausage and Egg Casserole
1lb bulk sausage
6 eggs
2 cups milk
1 tsp salt
1 tsp ground mustard
6 slices bread (white or whole wheat) cut into 1/2 inch cubes
1 cup shredded cheddar cheese
Brown and crumble sausage, drain and set aside. In a large bowl, beat the eggs, add milk, salt and mustard. Stir in the bread cubes, cheese, and sausage. Pour into a greased 11x7x2 baking dish. Cover and refrigerate overnight.
Take it out of the oven 30 minutes before baking, bake uncovered at 350 for 40 minutes or until a knife inserted in the center comes out clean.
oh man. I had all these plans to make this great christmas dinner but I am so tired and stressed out as it is... I don't know. We might have to go the simple route.
The in-laws are in town for the holiday. le sigh. let's just hope my MIL doesn't insist on cooking. I'd rather haul my ginormous a** around the kitchen than have her cook.

We are going to be at my parent's house, as well as my SO's g-pa's over the course of xmas eve and xmas, so we'll have the more traditional ham-potatoes-green bean casserole deal other places. Just too much work for me while uber preggo.
