I have 6 to bake for. I was going to do the vanilla, but procrastinated until it was too late. I was going to do homemade peanut butter/chocolate spread, but one jar took me several hours. Then I was just going to buy it, but then H was all like, "Um, you've seen the cc bill, right?"
My only idea is banana bread. Any suggestions?
If it isn't obvious from my posts, I am in full on last minute panic mode 4 days to Christmas Eve. I just can't get ANYTHING done with AM.
ETA: I'd rather not do cookies. Baking to fill 6 containers usually takes me a full day which I do not have.

How about the Christmas Crunch or as some callit the Christmas Crack.
1 box of corn chex
1 bag of pretzels (you can even find christmas shaped ones)
1 large jar of dry roasted peanuts
1 package of green and red M & M's
1 24 ounce pagkage of white bark coating
cover a large area with wax paper and tape down.
in a large bowl combine the chex, pretzels, peanuts and M&M's
in a smaller bowl melt the bark in the microwave in 20 second increments and stir in between, once melted, pour into the large bowl and toss with the dry ingredients. Dump the mixture out on to your wax paper and spread out in a thin layer to dry, Once dry, break into pieces and put into decorative containers.
WARNING: this is addictive!!

These are super easy, no bake, retro treat. As bonus, I can make them quickly in a Cuisinart or kitchen aid and the kids can "help". They get rave reviews from everyone I have given them too, and you don't need a ton to fill a mason jar. You can use another extract, if you don't like rum, you can read the reviews to find other options.

I did this one and two other kinds of bark (toffee almond and salted caramel with pretzels) and put some in little cellophane bags with a pretty bow and a gift tag to give to the kids teachers with a gift card.

I forgot about biscotti! They are pretty quick. I think I will do that or try one of the ball/truffle ideas, and the "crack" mix for my SIL who has diabetes.
I also found out I can buy raw peanuts already skinned. The reason the spread takes me so long is trying to pick off all the skin after I roast them. But if they're already skinned, it'll take me 20 minutes, tops, for a batch of 2-3 jars. So one of those, plus the above ideas.

Homemade granola. You can make a big batch all at once with things that you probably already have in your pantry, then give it away in big mason jars wrapped with a pretty ribbon.
