holiday side dish recipes?

Anyone have a favorite go-to side dish for holiday dinners?  Can be veggie/grain/starch/etc

I plan to make some new recipes this year and I'd love to hear your ideas!  

P.S. We are having ham and biscuits, but the sides don't need to necessarily complement the ham.  If it is yummy, I'd like to hear it!  TIA

  • Sweet Potato Casserole...it's scrumptious!

    -6 cups mashed sweet potatoes (5 to 6 potatoes-see step #1)-3/4 cup dark brown sugar-1/4 teaspoon cinnamon-1/4 teaspoon salt-1/2 cup heavy cream-1/4 cup melted butter-2 cups mini marshmallows
    Oatmeal Streusel:-1/2 cup rolled oats-2 tablespoon all-purpose flour-1/4 teaspoon ground cinnamon-4 tablespoons dark brown sugar-4 tablespoons cold butter
    Boston Market Sweet Potato Casserole Recipe Instructions:
    -Preheat oven to 400 degrees.-Rub a little vegetable oil on the skin of each sweet potato and bake them  for 60 to 70 minutes or until they are tender. -When the potatoes are cool enough to handle, scrape out the insides and use an electric mixer on high speed to beat the potatoes until they are mashed and smooth. -Place 6 cups of the mashed sweet potato into a large bowl.-Add 3/4 cup brown sugar, heavy cream, melted butter, 1/4 teaspoon cinnamon, and salt into the sweet potatoes and mix well with the beater.-Pour this mixture into an 8?8-inch baking dish.-Make the oatmeal streusel by grinding the rolled oats to a fine flour using a food processor. A blender will also work.-Combine the oat flour with 4 tablespoons brown sugar, all-purpose flour, and 1/4 teaspoon cinnamon in a small bowl. -Cut the cold butter into the dry mixture using a pastry knife or a fork. You should have a crumbly mixture with pea-size bits. -Sprinkle this oatmeal streusel over the sweet potato mixture and put it into a 350 degree F.  oven for 70 to 80 minutes or until the top begins to brown slightly.-When you remove the casserole from the oven immediately spread the marshmallows over the top. 

    -Let this sit for about 10 minutes.

  • I'm a sucker for corn pudding. I make it all the time because it's so easy and my daughter loves it. You can make it the night before and then just pop it in the over before you are ready to eat.

     

    Corn Pudding

    Serves: 12-15

    Prep Time: 10 min

    Oven Temp: 325? ? 1 hr (may take longer if you use a deep dish)

     

    Ingredients:

    ?        2 eggs

    ?        4 flat tbs sugar

    ?        2 heaping tbs cornstarch

    ?        1 can evaporated milk

    ?        2 cans of whole kernal corn (drained)

    ?        2 cans of cream corn

     

    1.    Wisk eggs, cornstarch, and sugar

    2.    Add evaporated milk

    3.    Add corn

    4.    Poor into greased pan

    5.    Bake 1 hour

  • I love this one for any main dish:

    Baked Green Beans

    This came from my sister's sister-in-law. I love making this for the holidays and it is as good reheated as it is fresh out of the oven. I use the precut steam in bag green beans for ease of prep.

    1 large sweet onion cut into wedges
    1/4 c cooking oil
    2 tbsp olive oil
    3 tbsp brown sugar
    1 tbsp soy sauce
    2 tsp balsamic vinegar
    2 lb green beans
    6 oz baby portabella mushrooms, halved
    6 oz goat cheese
    2-3 tbsp milk

    Preheat oven to 400

    Cook onions, covered, in cooking oil over medium-low heat for 15 minutes. Uncover and add brown sugar. Cook and stir over medium-high heat 3-5 minutes. Set aside.

    Combine olive oil, soy sauce, and vinegar. Toss green beans to coat and roast for 15-20 minutes.

    Spread onions over green beans. Mix goat cheese and milk with a hand mixer, spoon over green beans and return to oven for 5 min.

     

     

    And I love this one with ham - we are having it Christmas Day.

    Pineapple Stuffing

    This recipe came from my sister-in-law Michelle. This is great with ham and I most often double the recipe to serve a bunch of us. It is sweet but no one complains since it is so yummy.

    8 oz crushed pineapple, drained
    1c sugar
    1/2c butter, softened
    4 eggs
    5 slices white bread, cubed and dried (overnight)

    Cream together the butter and sugar. Add eggs 1 at a time. Stir in pineapple, fold in bread.

    Place in deep casserole dish and bake for 1 hour at

  • These are great...thanks ladies, and I'm still taking suggestions!  I will surely stash them away for future dinners, too.
  • Oops, it is 350 for the stuffing.
  • The Hickory Bridge Farm up in PA has a delicious pineapple stuffing.  I made it last year for Christmas and it was a huge hit... with me!  No one wanted to try it.  Boo...

    They do have lots of other recipes on their website.  I think I'm going to make their warm bacon dressing for my salad this year.

  • I just want to chime in to say, I LOVE pineapple stuffing.  And it would be delicious with ham.
