XP - need help with side dishes

We are now hosting Christmas celebrations on Christmas Eve for us (obvs), my mom and my brother and SIL.  We don't entertain a lot, so I'm feeling uninspired and stuck for good ideas to go with the prime rib we bought for the main meat attraction.  Apart from that, we've got dessert covered and that is it!

Throw some ideas at me, get me thinking.  Thanks!

  • Are you going to do a potato dish? I love just plain old oven roasted potatoes with prime rib... or mashed. We are doing a roast on Christmas Day with a big batch of mashed potatoes, maybe a green bean casserole (I am putting my FIL in charge of veggies so whatever he wants to make)... DH and my FIL love artichokes so DH will make them two (I don't eat them). He does them with garlic & oil, I believe he boils them... since we aren't doing Christmas Eve and my DH loves doing all the fish on Christmas Eve, he is also planning to do fried shrimp and spaghetti with garlic & oil & anchove sauce (I don't eat anchoves, so he makes it without for me). I know none of this probably helps you lol. I am not a big cook... but definitely do a potato dish haha.

    Oh yum! That sounds good. Or maybe stuffed mushrooms or something like that? I don't really love mushrooms, but my FIL loves them with prime rib.

  • i'm thinking roasted vegetables - easy and really tasty.  you could do potatoes, and asparagus, or brussel sprouts, or a combination (zucchini, peppers, mushrooms, onions, etc).  mmmm, i'm getting hungry...

  • I host christmas eve for our DH and I's families every year... We always have a ham as our meat. Our sides this year will be yams with brown sugar, mashed potatoes,green bean casserole, tuna noodle caserole, & crescent rolls 

    you could also do corn/creamed corn, cheesy scalloped potatoes, stuffing, etc.
