Pioneer woman cinn rolls

You ladies have made and froze them before, right? It's GMIL's bday Sunday and I wanted to make her a batch of cinn rolls- b/c they're her fave. It's also what we have Xmas morning so I hate to make the dough 2x. At what point do I freeze them? How do they turn out?  tips?

  • I've done them. I didn't love them enough to do them again. They were kinda too sugary. I've frozen the dough and then thawed it out and baked it and I've frozen the baked but unfrosted buns. Either worked.

  • I want cinnamon rolls now...like right now.  Hmmm, I know I wouldn't mind the sugary aspect, but I'm not a coffee fan.  Can you taste it in the frosting?

  • I made them last year & I think I half-baked them, then froze (unfrosted- I put the frosting in ziplock baggies & then just ran them under warm water to thaw)

  • I make them. I put the dough in the fridge for at least 12 hours to get it more pliable. I don't find it pliable when it's warm, I have to keep adding flour because it's so darn sticky.

    I roll them out, butter, sugar, cinnamon, roll them up and cut. Then I put them on a baking rack or in a pan and freeze them like that. I put frosting in small containers and freeze that as well. Once you are ready to use them pull them out and let them thaw and rise then pop them in the oven! :)

    :::for the person who didn't like the sugar just don't add as much. There is no sugar in the dough so it's all about how much you add :)  :::

  • So time consuming to make, but so worth it!  The frosting is my favorite part!

  • I don't recall freezing them...so I guess I'm no help!  Sorry!
  • I saw her make them on the food network this morning...holy sugar!!!

  • I didn't have luck freezing them. When I did they were really dense and tough. I froze them before the 2nd rise in those disposable round cake pans.

    I have since started using this recipe from Annie's Eats and it is waaaay better, IMO. I haven't tried freezing it though.
