I've flown 14 times with DD in the last year, so here's my take:
Do you have a tablet or smart phone? We downloaded elmo songs and used an app called Toddler Lock. The app makes shapes and lines when the kid touches it, but doesn't mess with the phone at all. It's great! Also, interactive books where they can touch sound buttons along with the story are fun. Oh, and bring LOTS of food!

When we fly we bring lots of books, quiet toys, crayons and paper. Our kiddo likes to pretend to talk on our phone, but the whole "apps" thing-he could care less if there's something on the screen.

OMG I need this! Along the same lines, A's current favorite app is Peekaboo Pets.
We're flying to the UK for Christmas...it's going to be interesting keeping DS entertained for 8 hours (hopefully he'll sleep for part of it).
DS's favorite app is baby aquarium (it's free). I don't have many apps, but this is the one he loves. It's colorful fish swimming around underwater, and when you touch the fish, it says the color.
DS got a book for his birthday called "My First Words" that has pictures that slide to reveal words. He loved playing with it on the plane. Also his quiet book.
My phone always settles him down for awhile. I have a color app that he can color different letters.
DS is a good flier. He takes a bottle/sippy at take off, and always ends up sleeping most of the flight.
