I think Gretchen Elizabeth is a nice name. Elizabeth is soft sounding so it makes it less harsh. I think a good nickname would be Greta, as said before, or even Gigi.
LOVE Gretchen and Greta as a nickname. My friend Gretchen (who I generally just call Gretchen) is also called "G" by her family...and was called "Lil G" when she was a baby:) Pretty cute.

I grew up with a Gretchen and her nn was Gerty. Her dad also called her Gretch quite a bit.
IMO, Gretchen Elizabeth is not harsh at all.
