I like to put cinnamon sticks, cloves, nutmeg, and apple peels in water and boil. Sometimes vanilla extract. Once I added some vinegar to it and some citrus peels to the mixture and boiled to make a room spray that was awesome
I found a recipe last year on-line that smells wonderful. It has orange peels, cinnamon sticks and cloves in it. Thanks for reminding me I have to pull out the recipe.
I love baking apples with cinnamon and butter. It stinks up the house all day and it's a yummy treat!

I literally just peel and cut up the apples, sprinkle cinnamon (or cinnamon sugar if you want it sweet) drizzle melted butter over it and bake until mushy (time depends on amount of apples and size of dish)
If you want to make an all-out dessert of it, here's my "apple crap" recipe. Kind of a mix btwn apple casserole and a crumb-topped apple pie?
5-6 large apples, peeled and cut into small pieces
1c flour
1 egg
3/4 c sugar
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
cinnamon to taste
1 stick butter
put apples in a casserole dish and sprinkle/toss with cinnamon or cinnamon sugar.
mix all other ingredients except butter and sprinkle on top of apples (should be a crumby dry topping) and them melt the butter and pour over the top. You can sprinkle extra cinnamon sugar over the top if you want- just depends on how sweet you like it.
bake at 350 for about 50 mins
seriously, yum! and so easy

I am a fan of the cinnamon stick, orange peels, and nutmeg in water on the stove. I LOVE THAT SMELL. Can't wait to get unpacked at the new house and get some boiling!
The smell of Ina Garten's gingerbread baking in the oven always makes my house smell like Christmas, kind of the same way pumpkin pie baking smells like Thanksgiving.

For years I worked at the Gap and I have a stock pile of their Holiday candle (which they don't make anymore) and I burn those. They smell like a combination of pine and the best holiday stuff ever and I put them in the room with my fake tree so it smells real.
My husband also just came home from running a marathon with a Sentsy plug in with cinnamon stick scented wax bricks. I really like this as well.

i have done the whole pot of water and cinnamon stuff before.
But I just use Yankee candles now- and a lot of baking.
Just let it simmer all day on the stove top.
