NBR-Cancer cookbook/recipe ideas

I have a close friend that is battling aggressive lung and liver cancer.  His wife is trying to find good recipes and food that he can eat that is both good for him and will help in his fight to get healthy.   Lots of "superfoods", etc.

Anyone here have a cookbook recommendation and/or a few recipes that I could pass along?   I know they eat a ton of fruit and they're trying to eliminate all sugar from their diet, since cancer apparently feeds on sugars.  (Fruit and honey is okay, tho)

  • I'm so sorry to hear about your friend.  I don't have any cookbook ideas, but I love the recipes below...very easy and very healthy. 

    Quinoa and Black Beans

    1 teaspoon vegetable oil  1 onion, chopped 3 cloves garlic, peeled and chopped 3/4 cup uncooked quinoa 1 1/2 cups vegetable broth 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper salt and pepper to taste 1 cup frozen corn kernels 1 (15 ounce) can black beans, rinsed and drained 1/2 cup chopped fresh cilantro

    Directions

    1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
    2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
    3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

    Chicken sausage and beans 

    Slice chicken sausage and heat in pan over medium heat.  Add 1 can of white beans (drained), 1 can of DelMonte diced tomatoes with basil, olive oil & oregano, 4 sliced carrots, minced garlic, 1 tsp thyme.  Cook until heated through.

  • I personally battled breast cancer and was provided with a great cookbook created by the American Cancer Society. The Cancer Center's dietician gave it to me, so I'm not sure that you can purchase it at a store or anything. But maybe you/your friend can contact the American Cancer Society and ask about it?

    Another friend suggested I look into food/produce co-ops in their city.  Love that idea.
