KA Tacos ?

I'm stealing the idea to do a taco bar for DH's party instead of the italian.  I will have beef tacos and KA's tacos.  I have approx. 40 people who have RSVP'd so far.  How much KA's tacos would you make and have you ever doubled/tripled the recipe in one crockpot or should I use more than one cp to fix so much.  Thanks!

  • Hmm, I don't really have any idea how much chicken to use to make that much, but I guess I would start with maybe triple the amount of meat?  If you have a large enough crockpot you should be able to do that in one pot.

    However, I CAN tell you that I have doubled the recipe before, and it always ends up way too watery.  So while I don't think you'd have to use more than one crockpot, I'd just make sure not to double/triple the liquids - just add more than a single recipe calls for, but not exactly triple, KWIM?

  • I think I made a batch of 6 chicken breasts in one crockpot before which fed 10-12 and had leftovers. It was a bit dry, but totally saveable - we just added salsa in at the end. That's the great thing about this recipe - just add a bit more liquid (salsa or water or broth) and it saves it. I've never had this recipe fail me. I might suggest that you get or borrow a 6qt slowcooker which might let you do 8 pieces of chicken which would be more than enough if you're combining with beef.

    LOL. I had just the opposite happen to me, but my crock was old and small - so very unreliable. I'd definitely err on the safe side and follow amyliisa's suggestions, and check in every hour or so and add liquid as necessary.

    Ha!  I was reading your reply and thinking "well, that's just weird that the complete opposite happened to her!"  But MrsWildman is right - there's really no screwing up this recipe.  When it was too liquidy for me, I just mashed the meat (after shredding) down into the pot, and ladle out a bunch of the liquid.  No big deal.
