We are bringing a dessert to Thanksgiving and I have no idea what to bring. We need to bring something that can travel in a car for 4 hours without going bad.
I've made this recipe for several holiday parties and they are always a hit!
Pumpkin White Chocolate Cookies
2 cups butter, softened 2 cups granulated sugar 1 can (16oz) solid pack pumpkin (plain, not the pumpkin pie spiced can)
2 eggs 4 cups flour 2 tsp pumpkin pie spice 1 tsp baking powder 1/2 tsp baking soda 1 bag (12 oz) white chocolate chips
1 block of cream cheese, softened 1/4 - 1/2 cup brown sugar
375 degree oven. Spray sheets with cooking spray (or grease them w/ butter)
Cream
butter and sugar in large bowl until light. Add pumpkin and eggs, beat
until smooth. Add flour (slowly), pumpkin pie spice, baking powder and
soda, beat until just blended. Stir in chips. (Mixture will be wet, and
'airy')
Drop dough 2 inches apart onto cookie sheet by
teaspoonfuls. (use tablespoon if you want them bigger) Bake about 16
minutes, or until cookies are set in the middle. (cookies will not
harden as they cook) Remove and cool on wire wrack, or whatever is
laying around.
While cookies are cooling, beat together cream cheese and brown sugar. Add more or less BS to your taste. Frost cooled cookies.
If you are looking for something other than a cake or pie, I love black bottom cupcakes. Everyone always loves them and they are easy to make. You can find a recipe for these on allrecipes.com.
We are likely just going to buy a pecan pie....I wanted to make something, but we just found out one of our cats has diabetes and we just aren't up to making something. Those receipes looked delish though!
