Hmmm. I'd never heard of white american cheese, so I did a little looking and found this thread on chowhound. It mentions Boar's Head, which is a brand that my grocery store deli sells--although I've only noticed it for lunch meat, not cheese. All that to say: I'd go with deli cheese for your recipe.
