Didn't want to hijack TTT, but my favorite thing to do with quinoa is make it "Tex Mex." I cook it in the rice cooker with taco seasoning, and then add black beans, salsa, finely diced peppers (whatever color) and scallions, and shredded cheddar. You can easily omit the cheddar to make it vegan, add chopped spinach or other greens to boost the nutrient content, or add diced chicken to make it more filling.

-or sunflower seeds, chickpeas, dried cranberries, diced apples,
