So a friend of ours was visiting my MIL and said to her "so I hear your gonna be a grandma soon" (meaning I hear your son is trying to have a baby are you excited about being a grandma etc) and her response was "oh thats not gonna happen". Can you believe that?!? I already didn't like the woman; this made me really despise her. Am I out of line here? Would you be fuming?

I would definitely be fuming, but I have to ask -- does she know that you are having TTTC or not? If she knows, that's extra horrible. If she doesn't, it's insensitive, but not quite as bad.
Severe MFI. Me: supposedly all clear but eggs showed vacuoles.
IVF #1 January 2012, ER Jan 14th: 34R, 27M, 23F. Day 3: 18 embies still strong. Day 5: zero "good," one "fair," the rest "poor." Transferred 3. None made it to blast or to freeze. Jan 28: BFN.
Lucky IVF #2: Transferred two beautiful day three embies on St. Patrick's Day. BFP on HPT 7dp3dt. Beta 1 (14dpER)=106; Beta 2 (16dpER)=140; Beta 3 (19dpER)=264! First u/s 4.17.

Oh she knows everything! MH is not the kind to keep things from his mother. Before I even had a chance to think about it, she knew. But, we found out the trouble b/c I was having surgery so that is kinda hard to keep from people. She knew when I had the lap/d&c and everything the dr found and everything that means for us as far as ttc. You're right, it would be insensitive but not as bad if she was blindly saying that
For sure I'd be fuming! Some people have no respect.
I hope your DH will have a word with her about that.
