I am typing by phone, so forgive the formatting. We are doing a cowgirl theme for the girls' 1st birthday. I'm thinking of doing something like this (just ideas, not necessarily all of these): pulled pork, chips and salsa, fruit, cactus juice (punch), baked beans, root beer, texas toast or biscuits, cole slaw, veggies and dip, pigs in a blanket appetizers, and some kind of cake of course. Also considering fried chicken, potato salad, and some kind of cobbler. What sounds good? Anything else? Anything you'd skip? We are serving approx 20 people.

I know. I'm awful. I think I've been so worked up over this day approaching, so my best defense is to go nuts about it. I keep telling myself to keep it simple, and then I see something really cute and start all over again. Lol!!
Here's something get you going bananas again. I found this party blog on pinterest yesterday and it has a "cowgirl" theme on it. "The watering hole" idea is cute...where they have all the drinks set up. Keep it easy on you. Fried chicken would be a mess...but, yummy.

The party idea sounds adorable!!! i think your ideas are good - just need to narrow it down...
I think i would do:
pulled pork - are you doing sandwiches? if so, I would skip the other bread
baked beans
potato salad and/or coleslaw
chips and salsa and pigs in a blanket for appetizers
either cactus juice or root beer - the cactus juice sounds cute, but if its too complicated, you could just do the root beer
cake - i think this should be the star dessert - no need to do another.
btw, that whole karapartyideas blog is too cute!! i just bookmarked - looks like tons of great party ideas...
