I won't retype it all here, but our options are:
1. Go with white Home Depot stock cabinets that's we've already had some quality problems with. White cabinets, white tile with brown groute, New Venetian Gold Granite, black appliances. Total cost of cabinets = $1700
2. Upgrade to the cheapest option custom order cabinets. Espresso color Oak wood cabinets, same white tile, New Venetian Gold granite, black appliances. Total cost of cabinets = $2500
3. Upgrade to the maple wood white custom order cabinets to get the same look, but better quality cabinets. Total cost of cabinets = just under $2800.

how long are you planning on being in this house?
long enough to care about the quality of cabinets? or will the nice-but-cheap ones get you through until you sell?
We originally planned on being there 5 years. That was in September! At this point, we think we're going to stay another 3-5 years. We have some, but not a lot, of equity in the house and would like to have more before we move. We're happy there. It's far from my dream house, but it's "home" and our mortgage is so cheap, it gives us a lot of freedom financially.
Anyways, yes we'll be there for a few years, but not long term.
I voted for the upgraded white. If you were putting it on the market tomorrow, you could get away with the cheap ones, but in 3-5 years, low quality cabinets are going to really show and I think you'll be annoyed by them.
I think the white will look better and if I'm reading the options correctly, the upgraded white aren't that much more $$. I am certainly a fan of dark cabinets, but I think that dark oak looks kind of cheap and the white will look better in your kitchen. I really like the granite y'all have picked.
I was also going to vote for espresso, but then I clicked on your blog and saw the pics of your kitchen. I agree with the commenter there that if you have a lot of light/big kitchen, then go with espresso. If it's a smaller kitchen (not an open concept) without a lot of light, I think the dark color will make it look even smaller and then I'd go with white (probably the cheaper one).
are your current cabinets bad quality or you just don't like the look of them? If they're good quality already, look into just getting new doors, which will be WAY cheaper and you can get the upgrades that you want.
I totally see your dilemma. I answered Espresso Oak because I prefer that color, although I really do like the white with your countertops, too. I think if you're going to be there another 3-5 years, you'll want better quality cabinets, that are going to hold up and still be a "selling point" at that time ("custom cabinetry installed 3 years ago...", etc).
Also, I think the decision should be made on what you and DH like the best, instead of trying to determine what will be popular for resale in 3-5 years - who knows, maybe blue painted cabinets will be all the rage then! That's still quite a bit of time to live in that house, you may as well make it the way you like it now.
If your heart is truly set on the white, I'd spring for the custom white. You'll definitely get your money's worth out of it. IMHO, you don't want to skimp on the kitchen, no matter when you plan on selling!

Thanks for y'alls input and votes. In the end, I didn't want to spend the money on the cheapo cabinets. I was all ready to fight DH on getting the upgraded white, but the quote she gave us for those didn't include tax. All said and done, it was an additional $800 for the white. In other words, double our original budget.
I spent all day yesterday going through pictures of dark cabinets, and I'm feeling really good about our decision. We ordered them last night.
I guess I'll be spending the holidays installing kitchen cabinets! And thank goodness for company bonuses. Small, but helpful. I wonder if I should hold my breath for a Christmas bonus?!
