My fav simple, on the go, no prep meal is tinfoil chicken:)
Ingredients:
Stovetop stuffing
chicken breast
brocolli
cauliflower
shredded cheese
ranch
You just lay out the tin foil, put half the package of stove top stuffing& the seasoning down, chicken breast on top, brocolli and cauliflower on top of the chicken, cheese on top of that, drizzle with ranch. Wrap it up, leave just a little hole on the top, pour in a quarter cup of water, seal, and cook until the chicken is done.
Dissolve taco seasoning in chicken broth, stir. Put chicken in crock pot and pour broth/seasoning over. Cover and cook on low 7 hours. Take chicken out of crock, shred with 2 forks and put back in crock for 30 minutes on low.
Serve in soft tortilla shells with fixings.
Easy, yum.

Stuffed Peppers. I made them last night and we didn't have any leftovers. Another favorite (and easy) is pot roast. Boring but again, crowd pleaser. Another is taco night!

Rotisserie chicken (or baked if you don't have one), mashed potatoes and a roasted veggie.... A sure winner every time...
I will second this. And yummmm... my popcorn lunch is suddently not as appealing as the Swiss Chalet down the street.
Chili or pasta are always our favorites.
I also love shredded chicken tacos, although it's probably too late for these since it's a crock pot meal. They take like 3 minutes to make, and yum.

super easy crockpot chili -
1 lb ground beef
1 can dark red kidney beans
1 can diced tomatoes
1 small can tomato paste
1 bag frozen corn
1 packet McCormick chili seasoning
Throw it all in crockpot, cook on low for 6-8 hours or high 3-4. Serve with shredded cheese, sour cream, etc.
