So I made some carrots last night and decided I wanted to freeze them, but I haven't yet. They are still sitting in my fridge. Should still be good right?
First I put the broccoli (i always use frozen because i have no patience for cutting broccoli) in a bowl, coat it with evoo, sea salt, throw in a clove of garlic and mix it around real good with my hands. Then I put foil on a cookie sheet put the broccoli on top and cook for about 25 minutes. Then when it comes out i sprinkle parm cheese on it. delicious!

I just did asparagus yesterday at 400 for about 15 minutes. To coat funny veggies like asparagus, I like to put them in a plastic bag with evoo, salt, pepper and my no-salt seasoning from Costco and then shake until they are coated.
Also, Kirkland No-Salt Organic Seasoning. Get it. SO GOOD! I put it on just about everything these days.

I figured as much, but I never freeze anything besides meat and I would be the person to screw that up.
And dang those carrots were delicious. I've never roasted carrots and believe I will be doing so again very soon. Yum.
I've been obsessed with roasting asparagus and brussel sprouts. Just roasting in general.
If you are a Costco member, look for the Kirkland No Salt Organic Seasoning. It's awesome for roasted veggies for Mom and Dad
