We started with pockets thinking we would prefer them, and we do. That's pretty much all we use, with a couple other types thrown in there we use occasionally.
Now if we're talking brand, that's a whole different story :P
One. I did a bunch of research, picked BG and switched DS over when he hit 12 lbs. They've always worked great. I ventured into other kids after a while and they've all been fine too (some that I preferred more than others), but the first ones we got worked just fine and are still the bulk of what we use 2 years later.
We started with pockets because that's what everyone recommends but I really like the OS AIO's better. I like the natural fibers and they fit DS well. I do still like pockets for overnight as well as my fitteds. I got rid of some diapers at the beginning that I didn't like as much but honesly, they all worked just fine on DS and he is long and skinny.

We have 4 types in our stash - pockets, AIO, a few fitteds in infant size, and 3 sizes of prefolds and covers. The 3 brands are BGs, Grovia and Greenmountain prefolds/fitteds. I like all of them for different reasons. We got lucky I guess because there is really nothing in my stash I regeret other than maybe the BG xs because DS grew out of them so quickly and the Grovia newborns that leaked terribly but we didn't have a ton of either of those so it wasn't like I was out much.
Techincally it would have only taken one brand. I bought 12 BG pockets before he was born. Those were, and still are, our tried and true diaper. Fit great, no leaks. I like to try lots of variety though, so since then we've still tried tons of other brands and styles.

I did a lot of research while I was pregnant and decided I was really only interested in OS pockets and AIO. Over the course of my pregnancy, I collected a variety of diapers that I found on sale and I also got some at by baby shower. I ended up with mostly BG elementals, BG 4.0, and Charlie Bananas. I also have a couple Kawaii (heavy duty and goodnights), Itti Bitti Tutto, BabyKicks 3g, and Happy Heinys OS, as well as 4 sized Swaddlebees Simplex. We actually like and use all of these diapers, but I think the BGEs and BG 4.0s are our faves. I thought I would like AIOs the most, but I really like how customizable pockets are and they work great for overnight. I actually really enjoy trying differnt types of CD...I'd like to add a Blueberry and a RaR next
