At this point, I would say that we eat vegan about 75% of the time. It's difficult because DS and I each have food sensitivities, and between the two of us (since I EBF), meat is one of the few things that I CAN eat. I'm trying to do better because I feel healthier when I'm eating vegan, but a girl can only eat so many beans... On top of that, we all caught a cold, and when I'm sick, I need my chicken soup. I tried making a black bean soup the other day, but it just isn't the same. What's your comfort food? Is it vegan?

I was vegan for a number of years. If I wanted chicken soup, I would make it the same, just use veg broth and seitan (or tofu). I also liked making miso with an onion/carrot base (saute carrots and onions, add water, boil, simmer, reduce heat, add miso paste).

udon noodle soup - you can use any broth
butternut squash soup made with coconut milk instead of cream
mashed potatoes. yum. w. earth balance.
you can see I like the carbs = comfort.
If you do eggs, I know, not vegan, i like a big scramble with potatoes and tofutti cream cheese and any veggies on hand, particularly mushrooms and broccoli.
Oh, and pancakes or waffles. yum. and sausage, but again, def. not vegan! I also really like the morningstar breakfast sausage, but I think it has dairy in it. (whey or something)
These are a few of our favorite vegan blogs (Our family is always vegetarian, frequently vegan.) I cook from these two blogs constantly, and have had very few recipes that we didn't like.

I also just checked out a cookbook called Vegan on the Cheap, which has been great so far.
I'm a little odd, because my comfort food is a black bean burrito, lol. But for a more traditional comfort food, I make vegan potato soup. I don't really have a recipe, but it's quite easy.
Boil chunks of potatoes, then simmer until soft. Drain about 2/3 of the water. Add plain, unsweetened almond milk, a drizzle of olive oil, minced or pureed leeks, minced garlic, salt, pepper, and paprika to taste. If you like it a little richer, you can also add a scoop of vegan sour cream.

you can make it vegan by making a roux of olive oil and nutritional yeast, and then roasting or sauteing veggies for the filling. add fake meat if you want, but there is no need for it.

I use a different crust recipe, though, and just make that filling. My crusts are either out of Veganomicon or, if I am lazy, a store-bought oatmeal or graham cracker crust.
