Anybody have a good recipe for a healthy baked treat?

One of DH's clarinet students' moms emailed me last week to ask if our boys would like to have her kids' old MegaBlox, now that they've outgrown them.  Of course I said yes.  So last night when she brought her son for his lesson, she had them with her, and there's soooooo much more there than I was ever expecting!  It has to be, like, at least $200 worth of MegaBlox, with all kinds of super-groovy accessories, and all in mint condition (even after being used by all four of her kids!).

I'd really like to do something for her to thank her -- it doesn't seem like a simple thank-you note is nearly good enough in this case -- and my mind always goes to something home-baked.  The problem is that she just started her whole family on the Eat to Live diet and she's super-dedicated to it, so I don't want to derail that for her.

Is there a baked good I could make that would be yummy and would work with her family's new lifestyle?  (All my good recipes involve lots of butter and other evil, so they won't work at all.)  Or can you think of some other treat -- maybe even not a food -- that would be a good homemade gift?  She's a SAHM with four kids ages 10 - 14.
