So it hit me yesterday that this little boy will be here anytime! Yikes!! Thus today I am in a cooking frenzy getting all my freezer meals ready. Perhaps this is a form of nesting? If you are doing freezer cooking, what things are you/have you made?

Me too! So far I've made:
2 bags of Sweet Potato, Kale, Lentil Curry stew
2 bags of Sweet Potato, Black Bean, Chicken Chili
1 Pan of Spinach, Chicken, Lasagna rolls
1 Pan of Baked Kale, mushroom, sausage penne
And I still have about 4 or 5 more meals to go. So much to do!

I just started this week, too. We did:
- Tuna Noodle Casserole (healthy version with lots of veggies)
- Stroganoff with ground turkey & egg noodles (basically a casserole)
- Chicken enchiladas
- Pumpkin muffins (my fav)

A lot of freezer meals I've found are less healthy and I have a feeling I'm going to be craving lots of fruits/veggies to go along with them.
I've struggled with this too! The soups I made yesterday were just amazing and very healthy. I tend to load up recipes with extra veggies too, which helps! I also figure that if we are eating freezer meals at least we are avoiding takeout or pizza :-) My plan is to make a big salad and chop veggies (broccoli, cauliflour, cabbage, and carrots) that can be steamed in the microwave at the start of each week for side dishes.
I'm already thinking of starting weight watchers again, although I know I have to build up my milk supply first. Not that it is stopping me from enjoying Halloween candy this week!
