Starting my freezer cooking today

So it hit me yesterday that this little boy will be here anytime! Yikes!! Thus today I am in a cooking frenzy getting all my freezer meals ready. Perhaps this is a form of nesting? If you are doing freezer cooking, what things are you/have you made? 

Here is my list so far (not all today though!):

  • I've already roasted two chickens then took the meat off and froze that. (that way I can either have a chicken dinner or add it to enchiladas, soup, etc.)   I am also going to make potato soup, pumpkin rolls, and some cheesecakes (I make a lot of desserts for my family events.)   Thats pretty much it.  I have a small freezer :(

  • Good for you, all in 1 day???  I have only done 2 casseroles- 1 chicken and veggies and another pasta.  I have soup and chili saved from dinner a couple of weeks ago.  I need a day to myself to cook!!!!

  • Me too! So far I've made:

    2 bags of Sweet Potato, Kale, Lentil Curry stew
    2 bags of Sweet Potato, Black Bean, Chicken Chili
    1 Pan of Spinach, Chicken, Lasagna rolls
    1 Pan of Baked Kale, mushroom, sausage penne

    And I still have about 4 or 5 more meals to go. So much to do!

  • Yeah!  Hope you were successful.  So far we have done several casseroles:  Crab and pasta casserole, chicken noodle casserole, chicken and potato casserole, and cheese, potato, and hash brown casserole.  We did breakfast burritos, chocolate chip muffins and blueberry muffins.  I also have a bunch of chicken cooked off and frozen in bags for when I need to just pull something out of the freezer.  I have ground beef in the refrigerator to do the same thing tomorrow.  I still want to make chili, ziti, a recipe for something called More, some mac and cheese, and another Italian stew type recipe before LO comes.  Good luck everyone!!

  • Mmmm, I went to Costco today to pick up everything we need for our freezer meals.  We're only doing chili, chicken pot pies, and enchiladas.  I really wish we had a bigger freezer!

  • That butternut squash soup looks delicious! I might have to give that one a try.  I've been making double of dinner for the last few weeks and been freezing half of it.  So far I have a tray of lasagna, teriyaki chicken with stir fry veggies, broccoli cheese soup, crab soup, chicken noodle soup, chili, BBQ chicken, marinaded chicken, chicken primavera, chicken tetrazzini, honey pork chops, dijon pork loin, meatloaves, and tomato chicken gumbo.  I still have a bunch I want to make though! I'm thinking I might make some breakfast stuff if I have time.  Just have to see if the little one is going to hang around for another 4ish weeks.

    A lot of freezer meals I've found are less healthy and I have a feeling I'm going to be craving lots of fruits/veggies to go along with them.

    I've struggled with this too! The soups I made yesterday were just amazing and very healthy. I tend to load up recipes with extra veggies too, which helps! I also figure that if we are eating freezer meals at least we are avoiding takeout or pizza :-) My plan is to make a big salad and chop veggies (broccoli, cauliflour, cabbage, and carrots) that can be steamed in the microwave at the start of each week for side dishes.  

    I'm already thinking of starting weight watchers again, although I know I have to build up my milk supply first. Not that it is stopping me from enjoying Halloween candy this week!
