I made the EASIEST pumpkin muffins last night & they came out SO good I feel I need to share the recipe with all of you!
1 box spice cake mix
1 can (15 oz.) pumpkin puree
Brown sugar
Mix the cake mix & pumpkin together.
Evenly distribute the batter into lined muffin pans.
Top with a bit of brown sugar.
Bake for 20 minutes at 350 degrees
So easy & they came out so good!! The batter is a little thick & I was tempeted to add egg or oil or both but decided to give it a try the way it was & they were PERFECT!!
Re: Pumpkin Muffins
I think you have to prepare the cake mix per box directions then add the pumpkin.

Nope, it really is JUST the cake mix & the pumpkin. I thought it was odd & I wanted to add the eggs & oil as if I was making the box cake but decided to follow the recipe I was given & not do it. They came out great!
Chocolate chips would be a yummy addition. Or nuts. Frosting makes EVERYTHING better in my book.
Then I stand corrected. I would have made them wrong

i made some last week too! Pretty similar recepie.
1 package of yellow cake mix
1 can pumpkin puree
a dash of cinnamon, nutmeg, and cloves.
You just pour the mix and puree and the spices, mix it together and add a splash of water so its not too thick. That's it!! so simple... and they are super delicious
I saw this recipe but a lot of the comments said to use spice cake mix & then you don't have to add the spices. Just made it a little easier. But either way, YUMMY!!!!
OMG- I hadn't even thought about frosting them!! Sounds SO much better!
