Baking Moms-what do you use?

I'm pretty new to the whole EFF thing, so thank you for your patience.

I just started baking bread, and am looking for what pan/dish to use that is not non-stick. Would glass work? Or is ceramic better? What do you ladies who bake reccommend?

  • I like the baking pans from Williams-Sonoma. They have a great line of metal pans (I think it's their restaurant line, or something like that?). I believe they're aluminum, and they look like they have folded corners. They work wonderfully and cook evenly.

  • I have had bad results with glass.  I use metal pyrex bread pans and a couple of lighter colored metal bread pans that were my grandmother's.  Most of pans though you would oil, flour, or butter....they aren't generally non-stick.

  • My pizza stone is by far my favorite. I use it for cookies, pizza, and am planning some artisan bread soon. (Got the book. Just need to read it now!) When it doesn't work on the stone or the creuset, then we do pyrex glass or occasionally cookie sheets lined with parchment.
