The dreaded WFD Post

Anyone have any ideas?  I have "leftovers/out" on my meal plan for today, but leftovers really don't appeal to me and we're tight on money this month so I'd rather not go out.  I have all sorts of meat and whatnot in the freezer and basically almost any ingredient I usually cook with...just nothing sounds good.  What are you making tonight?

Re: The dreaded WFD Post

  • We had caesar salad and garlic breadsticks last night.  I just take romaine lettuce, shredded parm cheese, garlic croutons and cooked chicken and toss it all in a caesar dressing.  Garlic breadsticks are $2.50 for a box of 6.  Warm for 10 minutes!  :)

Not sure what we are having tonight.

Earlier in the week, we had steak with a baked potato and grilled yellow squash.

We had chicken quesadillas this week also.

  • Tonight we're having chicken tacos.  Tomorrow night, meat loaf and these potatoes, which look amazing.

  • Fri. Nights are pizza night in our house. This week, I made a whole chx in the crockpot, then soup with the leftovers. We had spaghetti/meatballs/sausage, grilled chx salads, chx stirfry, blackbean, cheese, chx quesadillas. I will be making meatloaf, mashed sweet pot, veggies this wkd.
  • We're going to my parents house and eating navy beans and cornbread, I think.

I bought some brats to throw on the grill for lunch.

  • Last night I made grilled cheese and tomato. I also tried this soup which was so good!! It's the roasted red pepper and tomato soup from Trader Joe's. You make that with pesto tortellini.  Put shredded cheese on top with some sour cream and red pepper flakes. We loved it! It was really filling. We actually didn't need the sandwiches with it but I'll definitely do it again.

Today is going to be rainy and I'm thinking about a Baked Cheesy Chicken casserole thing but not sure about that since we had such a naughty dinner last night!
