Need side dish ideas for DS picnic birthday party

We are having DS birthday party this weekend at the park.  We won't have access to electricity or a fridge.  It's also going to be 90 degrees.  I'm just going to keep the food in the cooler until we eat.  I am ordering a sandwich tray and having homemade salsa and chips.

I need a couple side dishes that can be cold.  I was thinking of some sort of bean salad?  Got any ideas?

  • how about a ramen noodle salad?  Always a crowd favorite and it goes a long way.

  • Popcorn salad. If I don't make this for DS's birthday or anytime we have a BBQ our friends kids revolt!

    1 large bag of white cheddar popcorn

    1 bag of precooked chopped bacon, use real bacon not simulated bits

    1 bag of preshredded cheddar cheese

    3 cups of chopped celery

    dressing: 2 cups mayo, 1/2 c sugar, 2 tbsp of vinegar

    Mix the dressing ahead of time and take with you. When everything else is ready, set out, dump all ingredients in big bowl with a lid, put the lid on a shake it, baby! Serve

  • I have a SUPER easy (and perfect for warm weather) dip sort of dish. We call it "Cowboy.Caviar" and it's so dang yummy!

    Here's the recipe:

    2 - 15 oz. cans of blackeyed peas (drained)
    1 - 11 oz. can of white shoe-peg corn (drained)
    1/3 C. of chopped cilantro
    3 cloves of garlic (minced)
    5 finely chopped green onions (including stalks)
    1/2 C. red wine vinegar
    1/4 C. olive oil
    1 tsp. salt
    1 tsp. pepper
    2 tsp. cumin

    Mix and refrigerate all of the above.

    Add the following just before serving:

    2 chopped tomatos
    2 cubed avacados

    Serve with Tostitos.Scoops

    You could prepare all of the ingredients from step 1 and step 2 and keep them separate until it's time to serve. Then you could easily mix them together at the picnic.
