I made an apple crumb "pie"

I really couldn't find a crust i liked.. ok ok - i was more lazy to make one myself. 

I made them in oven safe single round dishes, which worked great since it would never cut into a slice if done in a pie pan.. it would be messy but honestly, i don't think that would be so bad.. 

Crumb:  (you can probably use half of the ingredients since i had a lot left over)
2 1/2 cups flour,
1 cup packed brown sugar
1 1/2 teaspoons cinnamon
1 cup butter melted (not hot).. i used the soy/dairy free butter.

- Mix together with a fork. 

Apple mix: 
6 apples (peeled and sliced)
3 T of brown sugar
2 T white sugar
1.5 T cinnamon
4 - 5 t butter (I eyed balled this)

-  in a frying pan, melt the butter and add sugar and cinnamon. Makes a very dark mixture.

- Coat the apples with the mixture.

-in a oven safe dish, add crumbs on the bottom.  Add the apple mixture as high as you can get it and then add more crumb (until it's falling off the sides).  The "pie" will deflate so add it and pat it down. 

350 degrees for 50 mins

Yuuumm!! i made it last night and at 10 pm i had my first piece of this deliciousness.  I really couldn't believe that it actually worked.  I used about 5 different recipes to make it as simple as possible since most call for much more ingredients.

I'm curious if this can work with gluten free flour.

  • Never posted before but I wanted to share this recipe....I love it!!!  It's dairy free

    Banana Bread  (It's more cake-y than breadlike but it's yummy!!)

    •  1/3c applesauce
    • 3/4 cup white sugar
    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 3 very ripe mashed bananas
    • 1-2 teaspoons pure vanilla 
    1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan. (This can be made in any size pan or muffin tins just adjust the baking time)
    2. In a large bowl, cream the applesauce and sugar and add vanilla. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.
    3. Bake in preheated oven for 60 minutes, or until it tests done with a toothpick.

    I going to try it this week. I make a banana bread almost every friday and have been using the same recipe every time.. time to change it up.  This is also soy and egg free which is up my alley.  THANKS!
