f/u pumpkin stuffed shells (MLvK)

I made them for dinner last night and my kids devoured them!  I don't *love* pumpkin but I still thought it was good.  It made a ton so I put half of it in the freezer for another time.  Definitely a nice change from the standard pasta/ground beef/red sauce.

    I've been wanting to make these since Michelle blogged about them. But DH hates pumpkin :o( This may have to be a meal I fix when he's OOT.

    Will he eat butternut squash?  I think that would be a pretty good sub. for the pumpkin.

    I'm glad you liked them!  I was really on the fence when I was making them.  I think I was just in pumpkin mode.  But I got nervous as it was coming together.  I was making a batch for Josie too and I got nervous that they would suck.   But as I built them, I tasted one and I loved them!

    No, he won't he butternut squash. My husband is the pickiest eater on the planet. But I love pumpkin so I can just make it for myself :o)

    K&P may not agree with me, but I think you could not tell him there was pumpkin in it.  Its a really cheesey sauce that you might be able to get away with just saying is "cheese sauce".  Like macaroni and cheese.

    The pumpkin flavor definitely mellowed after it baked, not over powering at all.

    Joey doesn't really like pumpkin either, and he liked the shells.  it is definitely more of a background flavor.
