Success after IF

What's for dinner this week? And what should I do with left over Chili

It's been raining here for like 2 days and it's supposed to continue raining (some kind of tropical something) until wed! So I made Chili last night and have a tone left over..what else can I make with it?

And what else do you all have cooking up this week?! We failed at cooking last week, way to much take out and DH is home all week!!

  • Tonight we're having hamburgers and sweet potato fries.

    Tu: Chicken pot pie
    We: homemade pizza
    Th: Penne w/Artichoke & Sausage

    We always eat out on Friday nights.

    eta: I usually freeze leftover chili. If there's not enough for another family dinner I'll thaw it out later and eat it for lunch.

  • You could freeze it, make chili mac or put it in a pie plate and top it with corm bread batter.

  • Chili freezes well.  If it's not enough for another dinner, you could freeze it in single portion sizes for lunch or individual dinners.

  • I also freeze my chili.  Otherwise, I just serve it up a little different, but it's still really just chili ;)  Our variations:

    Chili on top of cornbread waffles

    Chili with toppers (fritos, sour cream, cheese, etc.),

    Chili nachos

    Chili hot dogs

    Chili spaghetti (my favorite!) 

  • Chili freezes really well. I'd save it for a night you don't feel like cooking.  :)

    We're having:

    sloppy joe's, sweet potato fries

    strip steak with blue cheese wine sauce, broccoli

    BBQ chicken pasta

    BBQ chicken chili

    meatball soup

    taquitos

    ham/cheese sliders, green beans

  • ditto on freezing the chili...   i love having an easy dinner in the freezer!    I just thaw the frozen block on the stove and voila!   dinner!

    so far we're doing...

    chicken, asparagus, and cous cous

    pasta with meatballs

    soup and sandwich night (prob turkey, avocado, tomato, etc. on pretzel buns with tomato soup)

    and maybe some leftover chili from the freezer.   :)

  • M: pork tacos T: leftovers W: turkey zucchini burgers T: chicken and mushrooms in a white wine sauce and green beans F: app night! Homemade hot spinach dip and ww chicken fingers. Chili--freeze it for later in the month!

  • I usually freeze leftover chili and heat when I need a dinner in a pinch.

    I am lazy for dinner this week but so far

    tonight: chx pot pie

    tues: chicken sausage with peppers and onions

    wed: homemade calzone

    Thurs: grilled chx, risotto, and asparagas

    Fri: pesto ravioli

  • mmm...chili...freeze some...make some chili dogs and chili tots...yum!! 
  • I'm very uninspired this week so:

    Tues- Chicken of some sort (probably marinated and thrown in my "Set it and Forget it") with whatever side I can find in the pantry

    Wednesday- On my own, so probably leftover chicken.

    Thursday- Pasta

    Friday- GIRLS NIGHT OUT!!!!!!!!!  DH is on his own.

    Saturday- maybe Frozen pizza.

    After that I need to do serious shopping.

  • If I have leftover chili I either freeze it or add a few spices, make some cheese enchiladas and pour it on top.

    M: Roast, Potatoes, Mixed Veggies

    T: crab cakes, roasted asparagus

    W: BBQ chicken, potato salad, beans

    T: ??

    F: take out!
