the only thing i made was jello which wasn't that great..

  • I made this Chicken Chili Verde this week. I liked it, but unfortunately the salsa verde i bought at the store was too spicy for DD. I think if I had made my own I would have been better off getting her to eat it.

  • I made a "fall" pork roast-

    sear the pork, add some white wine, olive oil, season to taste (I think I used oregano, truffle salt and pepper) sliced figs and apples and bake until tender.

    but I used Pamela's GF vanilla cake mix (I added some pumpkin+ baking powder and used Ener-g to sub the eggs).  If you like figs- then it's probably really good.  Too much fig for my taste but the cake part was awesome.  The Pamela's mix is "shared on equipment" for milk and eggs but I knew my DS would probably eat no more than one bite and the rest was for me/my co-workers.

  • I made some chicken kabobs tonight that the boys really liked.  They love eating anything on a stick though so they may be biased. Wink

    1/4 cup vegetable oil

    1/3 cup soy sauce

    1/3 cup honey

    1/4 tsp black pepper

    8 boneless/skinless chicken breasts cut in to 2 inch pieces

    2 cloves of garlic

    5 small onions cut in to 2 inch pieces

    2 red peppers cut in to 2 inch pieces.

    Combine all ingredients in a large bowl and let marinade in the fridge overnight or for at least two hours.  Assemble on to skewers and grill (it was raining so we broiled them for ten minutes each side).  I served these with rice. 

    Using eight chicken breasts made enough for 20 bamboo skewers worth and some extra which I froze to use in a stir fry at a later time.  We will be having these again for dinner tomorrow - I love to cook once and eat twice!

    When I make this again I will add more veggies to the skewers.

    My son too, he looooves using my chop stick to eat all of his food.. sometimes he even wants to use one of the chop sticks to eat his pasta -it's amazing and then frustrating.    For a while i though there was something wrong with him b/c he would NOT use a fork and a spoon -he knew how, he just didn't want to.. he either asked for a chip (so he can scoop it) or he grabbed a big wooden spoon to eat.  I guess it's more fun that way -and hey, as long as they are eating! :)
