I can't remember who posted about eating brie and an apple all the time but oh.my.god. You HAVE to make these. I didn't use the lemon zest but they are freaking delicious. Perfect fall food too. AHHH!! Brie is my "to die for" cheese. Well, I'm just a cheese person. These sound delicious. I've been wanting ot make myself a brie and pear grilled cheese sandwich, but I always forget about it until I'm sitting around without any ingredients. I will get these ingredients soon!!!

Yummmm. My biggest bummer was that my OB told me to stay away from all soft cheeses, even pasteurized, unless heated (she's really cautious). But this is a good way to get it in and get it hot!!

I'm sure other "normal" people would have some pretty fancy recommendations. I'm a picky vegetarian and only eat cheeses made with microbial or plant enzymes (instead of animal based). So I use Trader Joes Double Cream Brie.

Whoo hoo! I think this is the first food post that hasn't made me hungry! Of course, I can't stand any kind of soft cheese (I have some lactose issues), but still.... It's a milestone for me.
