What are your favorite Soup/Stew/Chili recipes?

Now that the weather is finally getting cooler I'm super excited to start making soups ect.  Not only is it a great way to get my picky kids to eat things they ordinarily wouldn't touch and I love the ease of making a huge batch to take out of the freezer whenever but oh boy do I simply love the warm, cozy feeling of soup for dinner.

I need some new recipes though.  My go to for Chili is the Beaver Creek brand ( I buy it at Safeway) because it's easy, quick and we all love the taste but I'd love to find a good recipe to make myself and if nothing else be able to cut out the sodium. I've got nothing in the way of stews so bring 'em on.

If you've got any other go to fall/winter recipes I've feeling the cooking bug coming on this weekend so let's have them all Smile

  • This is my favorite soup recipe, it's a super easy Corn Chowder from cooking light and people are very surprised when I tell them it's a low fat recipe.  This one in particular is a Corn and Crab recipe and with the crab it's a wonderful starter for Christmas dinner I've also done it plain plenty of times or added chicken.  If I do it with chicken I've found that baking the chicken with some sort of spicy seasonings works the best, plain chicken just gets lost in the soup and garlic seasons just don't seem to go well.

    *** I never add the nutmeg as called.  A, because it's not a spice I typically have on hand and B. it seems odds to me and C. I'm not really a nutmeg fan.

    Ingredients

    • 2 tablespoons butter
    • 1 cup chopped onion
    • 3/4 cup chopped celery
    • 1 garlic clove, minced
    • 3 1/2 cups (1-inch) cubed red potato (about 1 pound)
    • 3 tablespoons all-purpose flour
    • 2 1/2 cups 2% reduced-fat milk
    • 2 teaspoons chopped fresh thyme
    • 1/2 teaspoon freshly ground black pepper
    • 1/4 teaspoon grated whole nutmeg
    • 1 (14 3/4-ounce) can cream-style corn
    • 1 (14-ounce) can fat-free, less-sodium chicken broth
    • 8 ounces lump crabmeat, shell pieces removed
    • 3 tablespoons chopped fresh parsley
    • 1 teaspoon salt

    Preparation

    • Melt butter in a large saucepan over medium-high heat. Add onion, celery, and garlic; saut? 4 minutes. Add potato; saut? 1 minute. Sprinkle with flour; cook 1 minute, stirring constantly. Stir in milk, thyme, pepper, nutmeg, corn, and broth. Bring to a simmer over medium heat, stirring frequently. Cover, reduce heat, and simmer 20 minutes or until potato is tender, stirring occasionally. Stir in crab, parsley, and salt; cook 5 minutes, stirring occasionally.

  • I love taco soup, it's very similar to chili and super easy.

  • We got some celery roots in our CSA box last winter, and not knowing what to do with it I came across this recipe.... It was fantastic - we inhaled the whole pot that same night and I am seriously looking forward to making it again :-) mmmmmm
