  ETA: Stupid bump, posted before I was ready.

  I use a double crust, because crust strips don't cut it for me. Or, I take 2 personal sized ramekins, use them to cut my tops out of one crust and then use the leftovers to fill in the bottoms, and then put the leftover filling in my larger dish with the 2nd already made crust.
