does anyone have any ides for a yummy vegetable side dish that's not super bad for you?? my sister and i are helping out and bringing dishes to my parents house and this is what i got put it charge of.
p.s. i hate green beans, so nothing with that in it!

i like pretty much everything else, i'm looking up broccoli recipes now, it's my favorite. my hubby is making carrot souffle (yummy).
Vegetable Tian-
You saute garlic & onions in olive oil then spread them on the bottom of a glass baking pan. Next you cut up any vegetables you like into 1 inch rounds (i suggest zucchini, tomatoes, squash, and potatoes). Once you done cutting the vegetables you layer them side by side, alternating the differnt vegetables. Drizzle with a little olive oil and some herbs then bake with tin foil on top at 350 degrees until the vegetables are tender. Remove tin foil and then sprinkle with cheese (i like fontina or mozerella). Put back in overn so cheese can melt.

I'm making a chutney this year I think - cranberry orange - so thats gotta have some vitamins and such.
I make a mean broccoli.
Saute in a little butter diced garlic and lemon juice. Cook broc. till almost done then finish in saute pan with butter, garlic, lemon juice.
Delish and a bit lighter tasting with all the heavy dishes that go with thanksgiving.
I have a great recipe for broccoli and atrichoke casserole if you're interested.
Also, if you wanted to do something easy you could make marinated asparagus. You just steam that asparagus for a few min. then pour a vinagarette salad dressing (I usually use true french vinagarette) over the asparaguse and let it refrigerate overnight.
