Honestly, I think the pumpkin makes them all slightly cake-ish, but these have worked well for me and are more cookie than cake!
1 cup butter (2 sticks) softened 1 1/2 cups sugar 1 egg 1 15oz can pumpkin 1 tsp vanilla 2 1/2 cups flour 1 tsp baking soda 1 tsp baking powder 1 tsp cinnamon 1 tsp nutmeg 12-16 oz chocolate chips 1/2 cup almonds (optional)
*Cream butter and sugar with mixer. Add egg, pumpkin and vanilla. Mix well. Combine flour, baking soda, baking powder, cinnamon, and nutmeg. Add to pumpkin mixture. Fold in chocolate chips and almonds. Drop by spoonfuls onto foil-lined cookie sheet. Bake @ 350 for 15-17 minutes. Makes 2-3 dozen.

Cook your pumpkin down for a more cookie like cookie... about 30 mins over med heat
